Mix the instant coffee with the hot water (~80°C, just wait for the small bubbles to appear. No need to boil so you can save on energy).
Heat some sliced almonds in a saucepan at medium heat for no more than 45 seconds to roast the almonds and let the smell flow. Don’t let them burn.
Heat the almond dairy alternative until hot to the touch, but not simmering (aim for 65-70°C). Pour in a jug, add half a teaspoon of almond (or vanilla) extract. Sweeten, if desired.
Whisk the mix for a minute until frothy. Preferably, use an electric whisk.
Pour the frothy almond dairy alternative into the cup, carefully leaving the foam on top. Top with the roasted almond slices and serve.
