Coffee in Norway is usually prepared outdoors. This results in a thick, heavy brew. It's interesting to note how one version of this coffee's origin story was invented after a staff party in one of their local coffee shops. After the party, there was some leftover espresso and Tonic water. One of the baristas tried mixing them together with simple syrup and fast forward to today, "espresso tonic" is a modern hit. This recipe is great and refreshing for a tropical country like ours. Good as an afternoon or evening drink, it's a bit more complicated than our previous recipes but worth the extra effort!
